RECIPE OF THE MONTH

STEAMED MUSSLES IN WHITE WINE BUTTER SAUCE

1 lb cleaned Prince Edward island mussels (beards removed)

Half of a lemon

1 tbsp of olive oil

1 tbsp of chopped garlic

1 tbsp of shallots

1½ cup heavy cream

2 tbsp of whole butter
 
½ cup of dry white wine (chablis recommended)

1 tbsp of chopped basil

1 tbsp of scallions

1 tbsp of chives

Sliced French baguette, drizzled with olive oil (for grilling or toasting)

Kosher salt and pepper to taste
 

On medium high heat, sweat garlic and shallots in 1 tbsp of olive oil until translucent. Deglaze pan with wine and reduce by half. Add mussels, cream, lemon juice, straining seeds with hands and discard seeds. Add remaining juiced lemon, whole butter, basil scallion and chives. Cook until all mussels have opened, discard any unopened mussels before serving.
