CREME BRÛLÉE

INGREDIENTS

205 grams egg yolks

100 grams sugar
 
754 grams heavy cream

1 vanilla bean, scraped
 
 

DIRECTIONS

Measure heavy cream, vanilla beans, and sugar into sauce pan. Bring liquid to barely a simmer. Remove mixture from heat and slowly whisk in yolks. Chill mixture over ice bath. Allow to cool completely before portioning out into ramekins.

Bake brûlées in a water bath covered with foil @ 300 degrees F for 40-55 minutes. Bake until knife inserted into brûlées comes out clean. Allow brûlées to cool and chill in fridge for 4 hours until set. Cover brûlées with thin layer of sugar, tapping off any excess. Brûlée with torch.
