Easter will be upon us before we know it, and we're busy as bunnies planning our annual Easter Brunch Buffet. Put all your eggs in our basket and plan your family outing on April 16th, from 9am-3pm. We'll have face painting and balloons, along with an amazing spread of delicious brunch favorites and signature items.

RECIPE OF THE MONTH

TOMATO BISQUE

INGREDIENTS

10 large, ripe tomatoes (coarsely chopped)

1 tablespoon tomato paste

1 large white onion (coarsely chopped)

1 head of celery (coarsely chopped)

Water or vegetable stock (enough to cover produce)
 
1 quart heavy cream

1 clove of garlic

½ lb of butter (2 sticks)

1 cup powdered parmesan cheese

Worcestershire sauce

Salt and pepper to taste
 
 

DIRECTIONS

Combine first 5 ingredients in a large pot and cover with water or vegetable stock. Bring to a rapid boil and cook until vegetables are soft (stirring occasionally).

Reduce heat to simmer. Add heavy cream and use an immersion blender to blend until smooth. Simmer for 30 minutes then remove from heat. Add butter, parmesan, and 4 splashes of Worcestershire sauce. Use immersion blender and blend until smooth. Strain and season to taste.
