RECIPE OF THE MONTH

STEAK TARTARE

FOR THE DRESSING

2 egg yolks

1/4 tablespoon Dijon mustard

10 dashes Tabasco

1 teaspoon Worcestershire

1/4 tablespoon lemon juice
 
3 tablespoons EVOO

1 tablespoon chopped capers

1 tablespoon chopped cornichon

1 tablespoon chopped shallots

1 tablespoon chopped chives
 

In a medium mixing bowl, whisk together dressing ingredients and refrigerate until you are ready to serve.

 

FOR THE STEAK

1 8oz filet mignon, minced
 
salt and pepper to taste
 

Add filet to dressing and combine. Plate mixture using a ring mold or teacup for desired shape (optional). Serve with a fresh egg yolk and your favorite kettle chips or toasted baguette. Serves four.
